In 1983 our mother Maria Rosa inherits a considerable piece of land full of olive trees, most of them are 500 years old. In this olive grove there are two sorts of D.O.P. autocthone culitvars: the Ogliarola Salento e the Cellina di Nardò. Her husband Donato encouraged her not stop producing oil as the family had been doing it for centuries using an underground olive press which are a now a landmark of Salento.
Psychologist and Psychoterapist, she decided to take a turn in her career path.

She takes care of ecological projects with schools and tourist welcoming activities
AGRONOMIST AND OIL TASTER.
Qualified at the ONAOO, the Italian National Organization of Olive Oil Tasters, in 2002 join the company and implements new production processes which will increase the extra virgin olive oil quality. Positive reviews have been published on nationwide high ranked Food&Drink magazine since 2004.
He is out olive press supervisor. Michelangelo has a solid experience in all production phase, from field to bottle.
She has a strong passion and unbeatable knowledge of extra-virgin olive oil.

Qualified as a homeopath vet, Vito is in charge health-check of the supply chain.
He is particularly keen in adopting the Jairo Restrepo Rivera’s method of fertilising soil.
Vito is currently working to a new project of producing high quality extra-virgin olive oil hand-made soap.
